Just needed some feedback on the following question - keep second guessing myself and it is stressing me out :

for a little gathering between 3.30-5.30pm on a weekend involving kids and adults, would i need to provide light snacky/crackery/fruity type stuff or should i provide a sandwich/pasta type thing???

i am on a budget and yet dont want to seem like i havent put on a spread - also i dont want too much wastage.

Trust me, everyone will love you for these :) 2 cups plus 2 tbsp all-purpose flour ½ tsp baking soda ½ tsp salt 12 tbsp unsalted butter, melted and cooled until warm 1 cup brown sugar, packed ½ cup granulated sugar 1 large egg plus 1 egg yolk 2 tsp vanilla extract 1½ cups chocolate chips Adjust oven racks to upper and lower-middle positions. Preheat oven to 160°C. Line two cookie sheets with parchment paper. Sift dry ingredients together in a medium bowl. If you have an electric mixer use one, if not by hand will suffice. Mix together butter and sugars until thoroughly combined. Then beat in egg, yolk and vanilla until combined. Add dry ingredients and beat at low-speed just until combined. Stir in chocolate chips with a metal spoon. Now whilst this sounds tricky it’s what makes it really good (like old fashioned ones) and is easy if you read carefully... Roll a scant half-cup of dough into a ball. Holding dough ball in fingertips of both hands, pull apart into two equal halves by rotating the two halves away from each other. (Picture handling a rubiks cube?!!) Place the two halves on the prepared trays with the jagged sides UP, leaving room between each ball for spreading. Bake until cookies are light golden brown and outer edges start to harden yet centers are still soft and puffy (approximately 11-14 minutes). Do not overbake!! Underdone is better than overdone!! Cool cookies on sheets until abl e to lift without breaking. Transfer to a wire rack to cool. This recipe sounds pedantic but don't worry as it's really quite simple once you get going. Good luck!

I often make a very simple dip which a young friend told me about and is delish. Take a tub of light philadelphia or any other soft cheese, put it into a bowl and simply pour some sweet chilli sauce over the top of it. Served with crisps or crackers it's very more ish!!

[b'>HOMMUS[/b'> can of chickpeas (reserve the liquid) from fridge if possible 2 tablespoons lemon juice 2 tablespoons tahini 3 cloves garlic, crushed ½ teaspoon salt 2 tablespoons olive oil Mix all ingredients in the blender! Easy as. If you think it’s too dry or not mixing in, drizzle in the reserved liquid, whilst the blender’s going! If it's still too dry drizzle in a bit more olive oil. For a spicier hummus add a dash of cayenne pepper. This is a great recipe because you can make it up to 3 days in advance and apparently it can be kept in the freezer for up to one month. Add a little olive oil if it appears to be too dry.

I'd go limited snacks as it's in between lunch and dinner right? I agree with Muurtje about dips. My suggestion is: Something sweet - a large platter of home made choc chip cookies, with sliced fruit and japanese nuts; and Something savoury - big bowl of home made hommus with vegies (mini carrots, capsicum sticks )and rice crackers Less is more. Don't offer too many different options otherwise everyone wants to taste everything and you need so much more, therefore blowing out the budget! Keep it simple and make what you can in advance as packaged products cost so much more. Also it's nice to put things out and say "yes, I did make it, hope you enjoy". (I have great recipes for the above if you'd like, or of course substitute anything else you like!)

If you are on a budget, why not make a pasta salad with tuna, cucumber, feta and parsley. Cheap, tasty and can be eaten cold. Add a couple of dips; hummous either homemade or bought and this pea dip that is very tasty. Heat some peas with a small knob of butter in a saucepan. Add a good dollop of Labneh and puree ( I use my stick blender) once pureed add fresh mint and feta. Serve with taco chips or crackers. Another winner is little meat balls especially with children. Cheese and crackers can get a bit expensive, so the dips are much more economical. Hope you have a lovely gathering!
