175g (6oz) butter
75g (3oz) caster sugar (i use a TB sp of golden syrup and 2oz of brown sugar instead)
397g can condensed milk
melt the butter and sugar over a low heat until the sugar has dissolved and the mixture is golden in colour. Add the condensed milk, stirring continuously and bringing to the boil. Keep the caramel boiling steadily for 2 mins, whilst stirring to make a thick golden caramel. Take the caramel off of the heat and cool.

The toffee bit is the boiled tin of condensed milk. You could also buy Dulce de Leche or toffee sauce instead, just as good and save time. I thought the "offee" bit involved sprinkling coffee granules on before the bananas, or whipping coffee essence into the cream, or something?
