Where do you store ghee and tahini once opened...in the refrigerator? Once opened, how long can you keep ghee? I only use a little bit at a time and the tins are so big, I don't know how long it is good for.

Thank you in advance.

Tahina is high in polyunsaturated fats which will oxidise when exposed to heat and/or light, so it needs to be kept in the fridge and away from light Ghee is better kept in the fridge if you're not going through it quickly

I store tahina in the fridge. I also store the organic ghee in the fridge. I only put the non-organic ghee in the fridge during the summer (kitchen doesn't get cooled by the a/c). I have had both tahina and ghee spoil due to being stored in the kitchen cupboards.
