Packed lunches for DD (aged 16 months) - desperate for some inspiration...

DD goes to nursery full time five days per week so has all three meals at nursery every day. She's now 16 months and has a good appetite but I'm lacking inspiration about what to prepare for her.

I put her down to bed at 7pm and then start the evening packed lunch preparation, sippy cup and bottle washing marathon so ideally am looking for great ideas which are a) healthy, b) don't take ages to make and c) can be refrigerated overnight and taken to nursery in a cool bag the next day where they are then refrigerated.

I have one of the Anna Karmel books which is great for preparation of meals to be eaten straight away but the recipes don't always translate well into packed lunches.

Sure thing! DD LOVES these, and i just mix up the fruit depending on whats reasonable in the supermarket that week. 125g wholemeal or unrefined spelt flour 125g plain flour 3 level tsp baking powder 75g caster sugar 1tsp ground cinnamon 1 egg 125ml plain, full fat yoghurt 125ml whole milk 75g unsalted butter, melted and slightly cooled 100-200g blackberries, blueberries, strawberries, rasberries... your choice Preheat oven to 190, and put 12 large paper cases in a muffin tray (i use silicone muffin cups and they come out great) Combine flours, baking powder, sugar and cinnamon in a large bowl. In a jug put egg, yoghurt, milk and melted butter, lightly beat to combine. Tip wet ingredients into dry and mix lightly Add berries and stir through till just combined Split mixture between muffin cups and bake for 25 - 30 mins These freeze really well, ad are lovely served warm too.

Sorry to hijack but Kelly_C, would you mind sharing the recipe for the berry and spelt muffins? DD is also almost 16 months old and I'm always looking for new food ideas :)

Do they have to be cold lunches, or will the nursery heat food for her? I usually do a batch cook once a week and freeze/refrigerate portions. Then when that runs out its whatever we have had for dinner, and if its not suitable a 'picnic' lunch of mini rolls filled with egg mayonnaise, cream cheese, honey, tuna and sweetcorn, babybel, homemade fruit yoghurts, homemade berry & spelt muffins (i batch-cook these once every couple of weeks too - they freeze and defrost wonderfully) Hummus and dippers (breadsticks, homemade falafel or veg sticks). Polpettes are great finger food and you can use various veg. Pasta or rice salads with bright veg scattered through (sweetcorn, peas, peppers)

Hi I often lack ideas a.d inspiration too but have found this book v useful. http://www.amazon.co.uk/gp/aw/d/0091889510/ref=redir_mdp_mobile I make up batches of stuff then store in airtight jars and can be taken out as the week goes on. Also chopped up fruit in some fruit juice is good as it keeps it from drying out. fresh juice being best. I also use water bottles with the sports cap for mine to drink from. Then I have a collection so not the same rush to get ready. Can't really think of anything else! Sometimes I just Google to get meal ideas!
