The last one I tried was a leaf mix of rocket (a must), water cress and baby spinach with asparagus, chevin cheese, prosciutto, walnuts, croutons, avo and roasted butternut. Yum!
My bet is BACON BROCOLLI SALAD!

Mexican bean salad is georgous you can get the recipe on BBC Good food website it keeps well for a few days in the fridge there is also one for a pearl barley salad too on there which i also recomend

1 small red onion
2 limes, or more, depending on juiciness
1.5 kg watermelon, ripe and sweet
250 g feta cheese
1 bunches flat leaf parsley, fresh
1 bunches mint, chopped
4 tbsp extra virgin olive oil
100 g pitted black olives
1. Peel onion and cut into very fine half-moons and put in a small bowl to steep with the lime juice, to bring out the transparent pinkness in the onions and diminish their rasp. Two limes' worth should do it, but you can find the fruits disappointingly dried up and barren when you cut them in half, in which case add more.
2. Remove the rind and pips from the watermelon, and cut into approximately 4cm triangular chunks, if that makes sense (maths are not my strong point).
3. Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl.
4. Tear off sprigs of parsley so that it is used like a salad leaf, rather than a garnish, and add to the bowl along with the chopped mint.
5. Tip the now glowingly puce onions, along with their pink juices over the salad in the bowl, add the oil and olives, then using your hands toss the salad very gently so that the feta and melon don't lose their shape. Add a good grinding of black pepper and taste to see whether the dressing needs more lime.
I make a yummy couscous salad.

In a separate bowl I mix up chopped sun-dried tomatoes, sliced black olives, chopped artichoke hearts, diced red onion, diced red peppers, chopped cucumber, halved cocktail tomatoes. mix that with 2 tbsp of tomato pesto and 1 tbsp of balsamic vinegar.
Then when couscous has soaked up the broth, fluff it out and mix into the salad mix!
YUMMY! My kids both love it too. I often add a can of drained and rinsed chickpeas. My kids bring this to school for lunch very often!

One woman's out of the ordinary is another's every day :) But here's one I don't make often, but is delicious when I remember it - it's a mixture of chopped raw baby leeks, diced apples, a handful of peanuts (and raisins if you like them) in a dressing of (low fat Greek) yogurt and lemon juice or red wine vinegar. Yummy!
Just had a delish one right now. Feta cheese cubes, romaine and rocket leaves, cubed tomato, chopped carrots and a little olive oil. If my chicken thigh had thawed I would have cooked that up and added it too but I'll save another salad for later!
I havent had a salad nicoise in a long time, made one the other night and it was delicious! The capers really made it!
