Yes, you can use turkey bacon, just make sure you that the turkey is cooked until it's crispy. I use prunes. You can make a plate of combo of chestnuts, dates and prunes - make sure they are pitted. Chickpea spread: Can(s) of drained, washed chickpeas. Mash is a bowl but leave "chunks". Add to this: finely diced red onion, finely chopped cilantro and mint, salt, pepper, cumin (to taste), lemon juice, and oil if you choose. Mix together. Using the mini pita breads, cut each in half and stuff with the chickpea spread. You can also thinly slice French bread, toast in oven and put spread on the toast. Buy the cherry tomatoes that come in a package with the vine. Cut off top and scrape out the inside using a small spoon. Stuff with just about anything!!! Tabulah, feta cheese or Egyptian spicey cream cheese. Doing the tomatoes are a bit of work. Roasted peppers: Roast peppers red, yellow and orange, on top of stove or bake - until skin turns black. Put peppers in a plastic bag and seal, this helps to remove the skin easily. When cooled down a bit remove skin, cut peppers in half, clean seeds and membrane, chop the peppers. Put peppers in a bowl, add olive oil, some minced garlic, salt and pepper and put on toasted thins (using the French bread as above). Again, using toasted thins: chop up slices of turkey meat, separate (fluff) the cut pieces put on rounds and top off with a fruit chutney. There is a "five spice" chutney that works nicely. I just found a lovely blueberry and mint chutney in lulu's. edited by Crystil on 18/04/2011

If you have a bbq or just an oven it would be a great idea to throw some kebabs and potato wedges on. extremely tasty and will be a sure hit. potato wedges can be slightly brushed with oil and baked. add salt and pepper to season. for kebabs you can use lamb mince, add chopped corriander ,mint leaves, green chillies, garam masala(little) , lemon juice, finely chopped oniouns, salt, pepper and make a mixture. you can add cumin, turmeric as well. To keep the kebabs firm you can add some flour or bread crumbs or cooked mashed rice. Make the kebabs on skewers and grill/bbq or bake. You could also make a mint chutney - dead simple !! add yoghurt, mint and corriander leaves in a blender with some salt and blend. optionally you can add a small green chilli to this chutney. great accompaniment . Have fun. Hope this helps

Loaded potatoe Skins, Bake potatoes in the oven, when done remove and leave to cool for 10 minutes, cut potatoes in half Scraped out with a spoon the soft potatoe inside leaving the skins, do this for all the potatoes Put the potatoe in a bowl add butter and grated cheese, mix together Take the potatoe skin and re-fill it with the mix of potatoe and cheese Place the skins on a baking tray, sprinkle a little cheese on top and re-bake in the oven for about a further 15 minutes on high temperature until the cheese on top has browned, alternatively, grill for the last 5 minutes, These are great as they can be eaten hot or cold and you can add anything you want (i usually add bacon loudons to the mix, but as your guests are muslim you could substitue with something else?) They are Tasty :) always go down a treat when i have parties.

thanks for the recipes they sound great ...but my guests (and me) are muslim so wine and bacon are out of question ... i guess i can use turkey instead of bacon to wrap chestnut (or date or anyother nut) can you bake it ? has anyone tried it? Turkey or veal bacon should be fine. Also use non alcoholic wine or even fish stock to poach the salmon. Use can also get the frozen spring rolls, samosas etc from most supermarkets, brush them with oil and oven bake instead of deep frying. I don't know what you mean by Lasagna rolls do you mean cannelloni?

Chicory boats with tuna. Mix together some tuna, creme fraiche, mayonaise, S&P and some smoked paprika. Spoon into chicory leaves. This can also be done with chicken or shrimp. Pesto Palmiers (spelling?). Take some puff pastry, smear on some pesto or tapenade. Roll up and cut into slices. Flatten the slices slightly, sprinkle on some parmesan cheese and bake off in the oven.

Cherry tomatoes - halved, mini balls of mozarella cheese - halved, basil leaves. Get cocktail stick, push through halved mozarella mini ball, then through a basil leaf then half a cherry tomato with flat side down, then put on a dish. When dish full drizzle with EVO and sprinkle with sea salt and ground black pepper Blinis (often available in Carrrefour), dollop of soured cream, slice of hard boiled egg, bit of chopped shallot or finely chopped red onion and a dollop of lumpfish roe (poor man's caviar) Guacamole - 2 ripe (but not black inside) avocados roughly mashed, 1 medium size red onion, 1 large red chilli, juice of one large lemon. Finely chop the onion and chilli and add to the mashed avocado and lemon juice. Serve with breadsticks, melba toast or even Doritos, or sliced raw vegetables which can be prepared in advance and put in a bag with a little water and kept in the fridge until needed. Soft boiled quails eggs. Simply boil for about 2 minutes. Chill in cold, iced water. Peel (tip for this is to roll the eggs until the shells are cracked all around) carefully taking care not to break the white of the egg which will let the yolk run out. Serve with a dish of salt and pepper - and warn your guests that they are soft boiled, ie the yolks aren't set. Alternatively, boil for about 1 more minute and serve them hard boiled along side the dish of salt and pepper. Or another alternative, hard boil, peel and halve lengthways. Remove the hard boiled yolk and mash with a bit of mayonnaise and a touch of curry powder and pile the mixture back into the egg whites. Very late 60's/early 70's but still goes down a treat.

Salmon Pate, poach the salmon fillet in white wine. Allow to cool and flake. Blend unsalted butter with double cream and add the flaked salmon. Reduce the wine till only about one/two tablespoons left and add to the mix - pour into serving dish and place in fridge to set. Can be made extra special by adding a few cooked king/jumbo prawns when blending and then placing a few prawns on the top as decoration. - yummy - mind you I'd hate to add up the calorie content!

My Fav: Heat some olive oil, chuck in a little crushed garlic and let it brown a bit. Add a can of whole peeled plum tomatoes with the juice and smash em up. Add in chopped basil and salt and pepper to taste. When the mixture comes to bubbling and smells cooked, take it off the gas, put in a block of goats cheese and shove in the oven at high temp. The cheese should start to melt, but hold its shape in the tomato mixture. Serve with tiny toast or toasted pita chips.

Chicken turnovers -- Preheat over. Fry diced chicken cubes [1 cm size'>. Make white sauce and stir in chicken. Take puff pastry squares. Add dollop of chicken + white sauce mixture in the middle and fold in a triangle. Press down with damp hands to close ends. Use a brush to spread some whipped egg over the pastry [to make it a nice golden color'>. Line an oven tray with foil. Place turnovers on the tray and pop in the oven. After about 6-8 mins [or whenever you think the tops are a nice color'>, turn over the turnovers so that the other side can bake. Ta-da! :)

Fresh spring rolls (not fried kind) are always a winner too. Have a great recipe for hot artichoke and parmesan dip that is my all time favourite

Hilshire farms little smokies wrapped with shredded cheddar in a pillsbury croissant cut out and baked for about 15 minutes. yummooooo. Also, get a round loaf of bread, cut out the middle, make it like a bowl. Mix one packet of french onion soup mix with 16 oz of sour cream...pour into your bread bowl with cut out bread pieces placed around said bowl. good luck ;) edited by NYCDoll on 17/04/2011
