What is it? Well, it's made from vegetable oil. Vegetable oil is extracted from various seeds including canola, soy, corn, rapeseed and sunflower, often using industrial solvents like hexane. Because it's highly unsaturated, it is sensitive to heat and light and quite easily goes rancid (oxidises) This vegetable oil (which is high in omega 6, a pro-inflammatory fat), is then hydrogenated to make solid 'vegetable shortening'. This is done on an industrial scale using hydrogen gas and a metal catalyst such as nickel. This process is done at high heat and as a result, a fair amount of wonderful trans fats are produced! So yeah, commonly known as crisco. Marketed as a food. Ghee is not a vegetable oil, although it is vegetarian - it's pure butter fat (without any water or milk proteins). You can get organic ghee in the organic supermarket and regular ghee in most places. It's solid at room temperature Coconut oil makes a create alternative to vegetable shortening, a lot of vegans use it in their baking when they still want a decent flake

do you mean Crisco? available at all supermarkets in cooking oil section. 'Ghee' is also vegetable shortening.
