Thanks for that, I am in Bahrain, and the yeast is usually the problem, never thought to try a bakery. Dh is from Pulgia and I have panzerotti every day when we visit ( not good for the waistline) and prefer the panzerotti fritti. I will get him to make them :-), he used to, but got lazy .

I did give italian lessons in the past when i was living in Uk,never thought somebody would want to learn italian here...so i might do it again:-D.About panzerotti get a pen Fiona:700 gr of strong flour(wairose brand from spinneys)half tsp of salt, same of sugar,420 ml of lukewarm water in wich u will add a sachet of dry yeast or a 10gr fresh yeast(carrefour bakery, very cheap).Put the flour in a big bowl, add the salt mix it around, then slowly add the water with the yeast and sugar.Start working the dough,u will notice if the dough wants more water, depends from the weather, anyway u should end up with a soft bt firm texture.Let it rest an hour.Start preparin the filling:drained mozzarella(not the dry square one)chopped, some chopped tin tomatoes drained, bit of grated parmigiano or pecorino, pinch of pepper..has to b a dry compost. When dough is ready, get a rolling pin, flat the dough and get discs(the size is up to you)put some of the filling in the center fold them a fry in hot oil.U can do the same and put em in the hot oven, just make sure u dont overfill...same dough for pizza or calzone.Hope this help, let me know if u want to know more cos am very passionate bout cooking and proper food.Ciao

Natalie8,my grandmother is from round Naples 2,am from Puglia,so i personally mix Naples and Puglia's food so,what comes out is an idyllic mix of healthy and full of flavour food!!Parmigiana, panzerottti, pasta al forno, frittatas(with rice,or leftover pasta,or seasonal veggies etc.etc.etc)....and obviously the language,..willing to give lessons for both:-D
