What to do with chicken breasts?

I need some inspiration ladies - I have 2 chicken breast in the fridge for tea but no ideas for something to do with them to turn them into a healthy and delicious meal for me and OH. Nothing too time consuming as I wont be home from work before 7 and will be starving by then!

Lime brings out a lovely flavour in chicken. If you marinate the breasts in lime juice and rosemary for about 10 minutes and then bake or fry them with some chicken salt, it is a super easy meal.

hi I place the chicken breasts in a baking tray and smother them in a jar (1/2 cup on each)of spaghetti sauce then sprinkle with grated cheese, cook for approx twenty minutes on 350 then serve with a salad or even frozen wedges etc.. its yummy, low carb and most importantly quick and easy. If you decide to use them in your bra.... maybe don't cook them quite so long... hehehe enjoy your dinner Meg

Lemon Rosemary Chicken - cover with salt and dried rosemary (and garlic if you're up to it), slice lemons thinly and cover the chicken breasts - cook at 350 til juices run clear :)

Chickenburger on wholewheat bun should be healthy. Just dont add fattening sauces. @appletiser, where do u get wholewheat burger buns here? had put up the ques on the foodies forum, but no response. am lookin for wholewheat pizza base and burger buns. tia Have never seen wholewheat pizza base but Spinneys haswholewheat buns as I recall?

Chicken supreme. Stirfry the chicken breasts, make a basic white sauce and flavour with chicken stock cube and or herbs. I make a roux with flour, milk and butter which is tastier. You can add some fried mushrooms or any other veg and serve with rice.

Thanks for all the ideas - that Taste website is awesome! And I would love to just order a take out, cant give in yet though, we're only 6 days into the healthy eating/no alcohol January!

- Stir fry. Cut them into strips, add little veggies oil, sutee onion wedges add chicken strips, once they'r half cooked add some fresh mashrooms & bell peppers (different colors), little garlic powder, some ginger & a spoon of soy sauce. & cook for 20-30 mins. - Or Marinate chicken breast with some herbs (thyme, basil, oregano, rosemarry) + garlic powder, salt & pepper, mix with little olive oil. Cut onions, potatoes & some garlic cloves into rings, mix with the chicken , all into a pan & into the oven. Cover with foil for 30 mins, (add water or more olive oil if it's dry), then cook without cover for 20 -30 mins.

Cut some slits on the tops, put honey and wholegrain mustard in the splits and roast. I usually add leeks and shallots which I suppose is still healthy it's the white wine and cream that I also usually add you'll have to do without LOL!

Mix some feta with some herbs / sun tried tomatos, make a slit in the side and make a pocket, stuff the cheese mix inside and secure with cocktail stick - wrap in foil and bake in the oven for 20 mins or till cooked.
