After all these options, we all had enough inspiration for today's food!! exil: I noticed a very good Lebanese cooking recipes (with the clicks, that only Lebanese people know) but since you nearly spelled Reb Elremen ;) I think you are not!!!! AmyAus82: zataar is available in spinneys, Coop and carrefour, could be at the other stores but didn't check there you got me almazd ;) I'm not lebanese, but married to one for the last 8 years!

chicken in mint marinade: Mix yoghurt( one spoon for each chkn piece)dried mint(2 tbsp); white pepper to taste; crushed garlic(2 tsp);salt to taste. Let it sit for an hour and then grill or bake it as per ur preference for 20 min . This sounds nice, I also add pomegranite molasses to the yoghurt for a bit of tang - yummy thnx....adding granedine sounds interesting...lemme try....

Last night's dinner: Chicken breast chopped up and thrown in the food processor along with 2 grated zucchinis, defrosted spinach and loads of garlic. Shape into meatballs and put in the fridge for 30 - 60 minutes to firm up a bit. Put them in the oven to bake. When almost done, pour over a bottle of low-fat bolognaise sauce and a can of chopped tomatoes. Garnish with lots of basil and low fat feta. Very simple and healthy, and also great for leftovers the next day! mmmm, will have to try this one! Yes, they're yummy although DH was a bit perplexed at the sight of green meatballs... But don't worry, they look a bit bizarre when raw but brown nicely when cooked.

I think I got it in hyper panda. it's not in all the supermarkets. ummmm which aisle? I think it was in the tomato sauce aisle, but not completely sure. It's called Yamama Grenadine Molasses and has green and yellow on it. If you find an arab worker in the supermarket, tell them it's "Diss-ser-a-meen" (i think - please correct me ladies if I'm wrong), and it's for fattoush.

or Shish Tawook Serves 6 1 kilo chicken thighs or breast (thigh is more moist and tender) 1/3 cup olive oil 2 tablespoons of mild mustard ½ cup lemon juice 4 cloves garlic, crushed 1 tablespoon of salt ½ teaspoon pepper 1.5 tablespoons tomato paste 1.5 tablespoons zaatar 2 onions cut into cubes Wooden Skewers (If using a barbecue, soak the wooden skewers in water for half an hour before use.) Cube the chicken thighs and mix all the ingredients together in a bowl. Marinate overnight, or for at least a couple of hours before cooking. When ready, skewer the chicken pieces and onion alternately onto the wooden skewers and place on a barbeque grill, or onto an electric griller. Cook for around 10-15 minutes. Do not overcook as it can dry out.

Chicken baked with potato, tomato and mushrooms For the Marinade: 1 kilo of chicken breast, diced 2 tablespoons of zaatar 3 extra large garlic clovcs 1 chicken stock cube dissolved in 1 tablespoon of water ½ a teaspoon of salt ½ a teaspoon of sugar 1/3 cup of lemon juice 1/3 cup of olive oil For the dish: Mushrooms, sliced into rounds Tomatoes sliced into rounds Potatoes sliced into rounds Olive oil for sprinkling Marinate the chicken with the other ingredients over night or for between 4 and 6 hours preferably. Pour it into a baking dish and arrange the potatoes, mushrooms and tomatoes on top, sprinkle some olive oil on top and place in a medium-hot oven for about 35 minutes or until cooked. Taste the juice and see if it needs more garlic, lemon juice or salt and add accordingly. Serve with Lebanese style rice.

I cook the same thing again and again and again. I've taken chicken out of the freezer so I'm looking for some ideas what to do with it. Any suggestions - has to be easy to make as I'm c**p at cooking and not have 101 different ingredients. Many thanks.
