There's no reason you can't have partially cooked chips then just dunk them for a few minutes to finish off, so that they're fresh. Can't understand why the eaterie couldn't do that. but like someone else said, perhaps its too expensive to fry to order when I was a child, a chippy van would come round every Friday when Knots Landing was on. The chips were always piping hot and considered the best anywhere. I reckon they must have been frying on route. Chips with crispy bits on top for 15p. Bliss!

I would guess the chippies here have a much slower 'food turnover' than many in the UK, i.e. they're just not as busy so the food sells slower, so they make fewer batches and you end up with soggy chips. Or else they just don't do the chips properly! Sounds like maybe they're cooked only once and perhaps not at a high enough heat. I'm a spoiled girl at home and have two award winning chippies near our house. They triple cook their chips and everything :) This means that I avoid chish and fips here as it just always tastes subpar. If anyone knows one which is actually excellent (heard rumours about one in Arabian Center but haven't made it there yet) let me know! Ooooh what I wouldn't do for a battered sausage right now...so wrong, and yet so right :D The closest i had was the fish & chip room in JBR. It's still nothing like home but ok. Haven't found anywhere yet with the traditional salt & vinegar shakers. You know which one's i mean :) I've just finished peeling my spuds while listening to wham. He he he

By the way, this is a lovely article and gives some excellent advice if you want to do your own...in fact I'd recommend the whole "How to cook the perfect..." series, really fun to read and informative :) http://www.guardian.co.uk/lifeandstyle/wordofmouth/2010/may/20/how-to-fry-perfect-chips?INTCMP=SRCH

sorry was born and brought up in Grimsby and it has to be haddock for me :) and if chips came home soggy from being wrapped it was not unknown for mum to get out the chip pan and crisp them up Now that's what i like to hear. Treating the chips with the respect they deserve! I like it!

Am right with you Molly! Slurp There's no rule book about what you can & can't eat for breakfast is there? I'll have my fish & chips at 8am & my cornflakes around 1pm. Just checked the cupboard & vinegar is sat there waiting to be used. Oh happy Friday everyone!

chips are chips ! and its IRN not IRON :D hang on, are you saying that you would accept a freshly cooked cod and 30 minute old chips on your plate for your dinners? I like soggy chips the best anyway! Takes me back to childhood walking home with them wrapped in newspaper and getting soggy with the steam while we burrowed a hole in the end to sneak some out hoping mum wouldn't notce!

Deep fryers are available at Geant and Carrefour. Actifry makes better chips ;)

You'd expect them to have fresh (as in just cooked) chips at the ready at all times. Mc Donalds can manage it. Grew up across the road from a chipper (as we called it) and always had piping hot chips.

You could fry the chips at a different time to the rest for each customer but is time consuming and expensive to keeprunning a fryer on high. Also doesnt take into account other customers waiting time. Sounds a bit of an expat request. Certainly would be kept waiting backhomefor such a request and i guess here somewould be on their phones complaining about waiting times.

what, there's a chippy in Dubai? Where?! JBR, which is a bit of a dump but there are a number of 6/10 dining places. Apart from Wagamama which is 8/10 minimum

DH ordered haddock, chips and mushy peas with Pepsi and I ordered cod and chips and a buttered roll with Iron Bru we asked if the chips can be cooked same time as the cod, and got "yes madam" in response. When the food arrived the fish was freshly cooked, but the chips were warm (not hot) brown (not golden) and looked limp. I said that the chips werent just cooked and may as well have been speaking in Swarheeli the bairns were having a great time tucking into battered sausage and chips and completely unaware of the sub-par chips
