You will find psyllium husk in the health foods shops. Not sure about glyserine or do you mean glycerine, that is available in the pharmacy and some supermarkets. ETA You could also use lecithin as a more natural alternative to glycerine. edited by Di@DXB on 19/09/2012 Sorry, I meant glycerine. Thank you for the tip on the lecithin, that sounds more appetizing than the glycerine. In the past I never tried the recipes using glycerine because it sounds weird to me to use it in food. Welcome, definitely lecithin will do the same job as glycerine, although neither is absolutely essential, I would not like to put that in a lovely homemade loaf although I know its often used commercially.

A bit off topic, but I guess someone here may be able to help me. This morning I decided it is time to get out my 'Wheat- and gluten-free home baking' recipe book in order to mix my own flour again. The ingredients for the flour should be relatively easy to get, but some of the recipes require psyllium and glyserine and I am not too sure where to start looking for it. Any ideas would be appreciated, as I don't feel like going all over town looking in all the wrong places for it. TIA

The bread is made from rice flour - it is howevever not like styrofoam. Thanks for the info in re to the cross contamination. They did claim that it was made in a seperate area. I am planning to make my own tomorrow with a mix I picked up at the Organic Grocer. If it turns out nicely I may just carry on making it myself. We'll see. separate area is not enough, it should have separate equipment also, and remember, gluten dust stays in the air 10 hours or so, so if they also bake gluten bread that day (which they do) then its more then likely not safe (even if they have separate equipment).

I bought the Dovers Farm gluten/wheat free bread mix today from Waitrose. As my DS is also dairy intolerant I used rice milk in the recipe and egg replacer but it came out really well. I'm sure if you use normal milk and eggs it would be even better. It tasted better than the Organic store rice bread loaf I purchased at organic store last week. Yummy warm but not sure how it will be tmrw but it will make great toast. try the Mrs Crimbles mix, its really nice and so easy to make, a bit less 'dense' then the doves farm loaf. (cheap too, 14-15dhs in Spinneys or Lulus)

You can now also buy gluten free bread from Geant supermarket at IBM Batutta. In the bread section on a middle shelf, top row I think it was and it looked really nice. Good to see there are becoming more GF products available. I have asked the bakery there so many times and its always not available, they never know even when or what day it comes in either. Do you know when I might catch it?

I purchased two fantastic loaves of g-free bread today at Choithrams in DSO. Simply place your order and pick it up the next day at only 6dhs a loaf. We were over the moon! given the lack of gluten free bakeries in Dubai I can only tell you that this bread would not be gluten free enough for any celiac. It most certainly would be above the 20 ppm that is the limit in most other countries. Gluten Free bread needs to be made in a gluten free facility. Add to that the fact that even the bread I make from scratch myself comes to at least 15dhs a loaf, makes me wonder which flour was used? If you are Celiac then please ask some tough questions before buying this bread again. It is SO easy to call something gluten free and make something gluten free. Not so easy to make sure it really IS gluten free.

I use the shaar brand from Carrefour and the result is a hit and miss...sometimes great and sometimes not .TIA The Mrs Crimbles is available in most Lulu's and Spinneys, and the 'The REAL Bread Mix' is available in Milk & Honey and at the Gluten Free supermarket. The real breadmix one is amazing, best gluten free bread I ever had! Stay away from basco breadmix, its like eating melted tires, lol, although the Basco GF pancake mix (Spinneys) is awesome!

I bake all my bread, not sure if you are celiac or not, but gluten contamination of baked products here is very common. Buy imported, Lulu's, Spinneys, Gluten Free Supermarket all have the imported stuff. I will buy it only occasionally though, with a family of 4 and a gluten free house it can get really expensive. I use Mrs Crimbles Bread mix (13-14 dhs a pack) makes a pretty small loaf, but tastes great, or the Real bread mix (Milk & honey or GF supermarket) around 19 dhs a bag, that will make 2 smallish loafs or one huge loaf. When I have time and feel inspired I bake from scratch using Doves farm flour, the bread one, not the normal one. Then just use the recipe on the bag. Gluten Free baking is not the same as 'normal' baking so takes some getting used to. (If you ARE celiac, make sure your baking equipment has not been used with gluten in the past, buy new) Check out the Gluten Free UAE facebook page, they have tons of gluten free people there who can help, and also a website. <em>edited by Purple on 20/08/2012</em>

Lulu supermarket: Ener-g is the best brand. Its aboout AED25 a loaf. Located in the fridges near the fresh bakery bread. If you are lucky you may find pizzas and the garlic tear and share bread in the freezer section. They had loads for ages and then it disappeared. <em>edited by samie10 on 15/08/2012</em>

I make my own using the bread mix sold in Carrefour . It is an Italian brand and comes in a yellow box. I use my bread maker and double the yeast in the recipee .

Organic shop gluten free day is on Tuesdays but they often run out of flour. I have tried several times to bake without much success *sigh*. The glutenfree- supermarket has a good selection of gluten free products. We love the sweet bread rolls!

The Organic Cafe bakes it fresh and also has some dairy-free varieties too. Not sure about the greens branch but Dubai Mall makes it. Altho they are making a lot less during Ramadan and their shelves were a bit empty last week
