Hi,

Anyone knows where I can buy a couscous pan in Dubai please?
it looks like this:

Global village will open soon (1st Nov?), I'm sure you will be able to find the pan there. I saw some in Carrefour, but just after Ramadan, they might put some out for Eid? HTH

The best way for me to describe how to get there is to describe it as follows: If you are at the Main Post Office, turn right out of the post office and go to the end of the road by Aati Furniture Shop. Turn right. This is a road that joins up into Shk Zyd Road. As you are going straight, there is a slip road that leads into a furniture store (Hubazah or something like that) and there is a BabyShop. Get on that slip road and go towards the end. Hadi is just before the end of that slip road -- which turns to the right and leads you back towards the road that takes you to the Post Office again. I sure hope that helps. By the way, their towels are a good deal as well.

Where is Hadi? I ordered my couscousier from Spain but it was too big to pack with me from the USA so now I need one here. (I wore a hole in the one I was given by MIL from France) I prefer to make it the old fashioned way. And if you add butter at the end it takes out all the lumps. Each time i add more veggies to the stew, I take the cousous and break it up lightly and remove as many lumps as possible. The butter at the end clears up the remaining lumps. I have also successfully made the cous cous part in the microwave, and it was much faster, btw. :) YUM, now I want some!

Just an update -- I happened to stop into Hadi (they are having a sale), and noticed they had a nice looking couscous pot there for about 120 Dhs. (I think).

And I do the couscous both ways, with or without couscousier, and people don't notice. I do use some of the water from the stew to cook the grains. Or sometimes, it don't and put a few rs of orange blossom water while cooking the grains. Great! will look in Tavola, thanks Tiki! and thanks for the offer to lend urs, but will just keep looking, my sister is coming to visit from France, and will bring me one if I cant find it here :-) U do notice the difference when u've always had the steamed one, well at least I do, so does my husband, and he's never had the steamed one before we met. I suppose its a preference thank u

Tavola usually has some couscoussiers. I have one andndon't use it much, if you want I can lend it to you until you find one. C4 normally have some, but it's now summer, so I assume the shelves with be emptier and they will re stock only for automn., knowing the Dubai custom of everybody leaving for summer, and hubbies being bachelor for a few weeks... I saw nice ones in an other kitchen tools shop...not sure, might be the ones in festival city, on the passage between ikea and the mall...

I usually put it in a regular pot, and equal amount of boiling water, add butter to taste and it's never lumpy. But I guess it's not authentic! I do the same thing and always get great results. Never understood the need for a special pot - except for the fact that it looks nice! With the special pot, the taste is definitely different. And it's also part of the tradition I guess. But, It takes hours to do it in the proper way !

Here's my method for cooking couscous in the oven. I developed this when I used to cook large portions, but I still use it now when just cooking for my husband and I. Here goes: Put the oven on 250 and add a large pat of butter into an oven proof pan. Put in oven and melt. When melted, add the dry couscous to the pan and stir well to coat each grain. Next, add about 1/2 cup of water - you want enough to just really dampen the couscous, stir well, and cover with foil and put into oven for about 10 minutes. You want to allow some time for couscous to absorb and create steam. Take pan out and stir to loosen couscous grains, then add more water (usually 1/2 cup or so at a time) and follow same procedure until couscous as doubled in size and becomes tender. {While this is going on, I am cooking the meat sauce.) When couscous is done, add salt to taste and add the oil skimmed from the meat sauce to color the couscous. If you follow this procedure, the couscous at the end will be tender, tasty and not sticky and full of couscous balls. Clean up is a breeze and I, personally, can't tell the difference between couscous made this way or steamed is a couscour. My best guess for buying a couscour would be to go to the kitchen shops in the souks like Karama or Satwa or in Dierra. Hope you find one Pepito.

Pepito: My husband is from Libya, and they are known for their coucous. I have a coucous steamer, but if you have never used one, I will warn you now that they can be notorious for steaming into lumpy messes and the starch can be a mess to clean. Years ago, I developed a method of making couscous in the oven which is very easy but just a little bit time consuming -- however it's pretty much fail proof. People were always surprised when I tell them I make it in the oven -- especially my husband's family. I don't think they "approved" of my method, but they never complained about the end result (and yes they would have). Years ago, so the story goes, a woman in Libya was judged by how well she made couscous (without lumps). If you want my method, just let me know. Thanks norak, It would be interesting to have ur method, until I buy my couscous pan! I know well how to use the couscous pan, since my gran ma is Tunisian and taught me how to make it the very old way ;):)

I looked in C4 and Geant, none so far :-( Yuliya, well if u read the cooking instructions on the pack it says, to add water...but the proper way of doing it, is to steam the couscous on the top part of the "coucoussier" (the couscous pan), and make the sauce in the lower part vegetable+meat/chicken... I only have french receipe, but I can translate that or look for english ones if u like I think I bought the last one but will check the next time I am in there for you in case they have restocked That would be really nice thanks Wuffles! will send a recipe soon

I didn't know you need special pan to cook couscous? just bought (first time) one pack and wanted to make it in a normal pan. How do you cook it? meat, veg, sweet? TIA for ideas!

you may want to try galleries lafayette in DM. They have tagines etc so they may have a "couscoussier".
