BOO!! Didn't find the Maggi kabsa spices at Spinneys!!!! Have you tried C4? I always get it there. It is very nice, sometimes I even just throw it in when boiling the basmati rice and afterwards add the rice to fried beef mince. Delicious.

BOO!! Didn't find the Maggi kabsa spices at Spinneys!!!! Didn't find it the kabsa mix either at the Union Coop. I did buy the shish tawook and shwarma spice mix and another one chicken garlic and ginger spice mix. I have to admit that the Maggi kabsa mix is one of those fly off the shelf products. I have struggled to find it at times myself, so usually when I do I stock up. Don't give up hope though, at least its locally produced so stocks get replenished sooner rather than later - it's a recipe worth waiting for. I'm not taking credit for this super recipe, it's all about the spices (but you will remember and thank me when you do find it :D )!

This kabseh recipe sounds soooo good! I may even have to make it this evening (if I can motivate myself enough to leave the apartment to head down to Spinneys for the necessary ingredients).

How about making kabseh? It's really easy to make if you use the Maggi kabsa spices that you can buy from pretty much any supermarket. I make it with chicken, it's not spicy at all just really nice flavouring. I'm not a fan of Maggi soups, but the spices range are great, you buy them in the same packaging as the soups. Basically you buy chicken pieces, I get thighs and drumsticks already skinned (but with bones) - get as much as you see fit. I buy around 1.5 kgs for a family of 5 but my husband eats a ridiculous amount of the chicken! Then dice an onion and shallow fry it in cooking oil. Then add to it the chicken pieces and shallow fry them as well. Add to them the kabseh spices (for 1.5 kgs of chicken I use two packets of the Maggi spices) with a little bit of water. Then once the chicken is cooked (or at least has all turned white) add to it about 3 chopped carrots and chickpeas (this is optional and you can do without if you want). Fry them all together for a couple of minutes and then add to the mixture as much water as you need to cook the rice. I use basmati rice and put just under two cups of water per cup of rice. So adjust the water amount accordingly. Then leave it until the water boils, then cover it and simmer for about 45 minutes. I also add to the mixture bay leaves and cardamon pieces - it gives a nice flavour, but you need to pick these out later. After 45 minutes, remove the chicken pieces and then add the rice. Leave the rice to absorb the water for a while before you cook it else the rice wont cook properly. I put the chicken parts in an oven tray, and then I cook the chicken in the oven for about 15 minutes before serving. Then you cook the rice as normal (let the mixture boil, then cover and let it simmer until the rice is done). Stir it a few times so that the carrots and chickpeas get stirred into the rice. Then just serve the rice in a dish and put the chicken parts on top. If you want you can fry some almonds, pinenuts or cashews and put them on top for decoration. yum sounds good! It is! And so easy to make, you should try it! I make something similar to your recipe it sounds yummy as well. Oh I should also add on my recipe that you remove the cardamon and bay leaves at the same time that you remove the chicken from the water. Don't cook the rice with them still in there :-) I'm so trying it!

Ok I feel obliged to share a recipe too now:) You will need: Minced meat Tomato paste Potato Eggplant Tomato garlic onion oil salt, pepper, sweet red chilli powder, cumin powder (or allspice), bit of cinnamon powder Cut the potatoes in thick slices and fry them. Mix all the spices, as well as chopped onion and garlic, together with the beef and a bit of oil and make little patties. Cut eggplant and tomato in slices. When you're don frying the potatoes, take a oven dish and start arranging the beef patties, potato, eggplant, and tomato slices (thick) in rows on their "sides". Make sure it's all nice and snug together:) Boil some water and make a thick tomato sauce out of the paste, use some of the spices used for the beef patties to season. Pour sauce of the dish, and put the dish in the oven. Enjoy:)

Very easy recipe, I cooked this last night for Iftar [u'>Gheimeh Badenjoon[/u'> (Iranian) (Split pea and aubergine stew) kilo lamb cubed or leg of lamb (with bone) 2 onions teasp turmeric cup of yellow split peas tin tomato paste tin tomatoes 3-4 dried limes (or powder) s & p couple large aubergines In pressure cooker fry onions til brown and then add meat and fry, add turmeric, salt and pepper. wash split peas and add, add tomato paste, tin tomatoes, puncture and add dried limes. add water (upto half of the pressure cooker) cook for about half hour or so until meat tender (if leg of lamb meat will have come off the bone) and split peas soft, and water has been absorbed and consistency is a thick yummee stew. (also some people add a pinch of cinnamon, a relative of mine adds a pinch of chilli at the end for more flavour) Note if using leg of lamb remove bone before serving. in meantime salt and fry aubergines, when khoresht (stew) is cooked place aubergines on top. Serve with rice, yogurt, and salad.
