I Really need to source some! Have tried almost all the stores here and still cant seem to find it... The snowflake brand is available but im looking for either softasilk or swans down or king arthurs flour. Checked into ordering and shipping it here but its workinG out to astronomical amounts for barely a kilo of flour! 100 dhs! Has anyone seen these brands here? Or do you know anyone coming from the US willing to pick up a few for me? For a price of course =)

Have you tried the snowflake brand? This is what I always use as it's what we get back in SA and it's always worked perfectly.

out of interest, what is the difference between this US flour and the UK's Self Raising flour which is what we tend to use for baking. From what i know , Bleached flour is banned in uk? Not sure abt all of europe thought but most def banned in UK. And bleached flour tends to make a finer cake. Plus the self raising kind already has raising agents added to it whereas normal non self raising does not.=) Using the normal one gives u better control of the rise of your cake so u know that might be helpful to a seasoned baker. But both work if u just wanna bake a cake ! =) Hope that helps!

You might try this substitute - although, I'd try it on an experimental basis rather than on something I was planning to use at a dinner party etc. Ingredients: Yield: 2 cups 1 3/4 cups all-purpose flour 1/4 cup cornstarch Directions: To make two cups of cake-and-pastry flour (cake flour), combine 1 3/4 cups all-purpose flour with 1/4 cup cornstarch; proceed with your recipe. The easiest way to do this substitution is to put 2 tbsp of cornstarch in the bottom of a cup measuring cup, then fill the cup as usual with all-purpose flour and level top. Repeat process to get your two cups. (I'd resift the whole thing after doing that) If you only need 1/2 cup of cake flour, put 1 tbsp cornstarch in bottom of 1/2 cup measuring cup, then fill and level as above Source: http://low-cholesterol.food.com/recipe/cake-flour-substitute-87689
