Try this one - it was recommended on this forum a few weeks ago and I really like it. and so did my DH who doesn't like the very sugary icings either. I didn't try piping it though so you may want to do a test batch first.
200 g Cheese, Soft, Medium Fat
100 g Sugar, Icing,
1-2 drops red and blue food colouring (to make violet)
Beat the low fat soft cheese in a bowl until smooth and creamy. Sift in the icing sugar and beat well. Add the food colouring. Chill for 20 minutes, then pipe or spread on top the cakes
I just LOVE cream cheese icing, but it melts in minutes here (Aus)...no AC to keep things cool. :)
I know that but what icing recipe should I use instead of buttercream?
You could always make the buttercream...but use salted butter instead of unsalted; then half the amount of butter and half vegetable shortening (helps it keep it's shape even in HOT conditions); drastically reduce the amt of sugar.
I made some yesterday...recipe said 4 cups of icing sugar. I used 2 cups and it was perfect.
My version -
1/2 cup salted butter, softened
1/2 cup vegetable shortening (Copha here in Aus)
1tsp vanilla
2 cups icing sugar, sifted
few drops of milk
Beat butter and shortening with electric mixer until pale and fluffy.
Keep beating and add vanilla.
Gradually add icing sugar until fully combined.
Add milk drop-wise until desired consistency reached.

What about the icing that's used on carrot cake?
cream cheese icing / frosting ......
Can you not do a dark chocolate butter icing - the bitterness of the chocolate would detract from the sweetness
or lemon / lime
My husband's birthday is coming up and have just taken a class of buttercream icing and how to pipe and stuff. But the sad part is that my husband doesn't like this icing as it is too sweet. Can someone please suggest me a good substitute for that and that can be easy to pipe and not melt like whipping cream??
