I know flapjack is so so good and tasty because of all the butter (mmmmm) and syrup in it, but I'm hoping someone might know of a slightly lower fat recipe perchance??

TIA.

HIGH FIBRE AND LOW GI.... I love this receipe and have lost count the number of times I've made it! 4 Tbsp crunchy peanut butter 4 Tbsp clear honey 100g porridge oats 50g sultanas 1Tbsp stoneground wholemeal flour Non-stick cake tin, 23cm x 15cm - makes 8 bars Preparation 10-12 minutes 1. Put peanut butter and honey in saucepan and heat gently until melted - takes about 4 minutes. 2. Add oats, sultanas, and flour and stir until thouroughly mixed with consistency of crumbs. 3. Pour mixture into cake tin and press with the back of a spoon. Bake in a pre-heated oven at 190C/375F/Gas 5 for 15 minutes. 4. Leave in tin until cool, then cut into bars. Leave until completely cold before removing from tin. 5. Bars can be stored in an airtight container for up to 2 weeks - not that they last that long as they are so scrumptious!!!! Enjoy.

Thanks for your replies ladies. I was after a tried and tested recipe, as some 'healthy' versions of recipes give 'healthy' a bad namel! Never heard of pancakes and flapjacks being confused before, but flapjacks (in my book) are oaty, and not made wiith a batter (like pancakes). Love the sound of your recipe UAE2012 - will give this a go soon. Thanks! :)

80g butter 60g brown sugar 60g (2 tbsp) honey 1/2 tsp salt 130g porridge oats 35g chopped dried apple 35g chopped dried apricots 25g dried cranberries 25g pumpkin seeds 2 tbsp sunflower seeds 25g desiccated coconut Method In a saucepan, melt together the butter, sugar, honey and salt. Mix all the dry ingredients together in a bowl and stir in the butter and honey mixture. Line and grease a 20cm square baking tin. Spoon the mixture into the tin and press down to level the surface using a potato masher. Bake in an oven pre-heated to 180ºC for 18 to 20 minutes. Store flapjacks in the fridge and cut into bars before serving. This is the healthiest flapjack i know, if anyone has a healthier one then I'd be happy to try them too. Maybe there's a way to subsitute brown sugar with something else.

Got this book called deceptively delicious - the general suggestions are to swop for the low fat / sugar substitute option and then hide some veggies in it e.g add butternut squash to pancakes or broccoli (yes broccoli - and it actually tastes good ) or blueberries then for the topping maybe strawberries or proper butter not margarine

well in my thinking... is a flapjack like a crumpet? I make my own version which are healthy (I call it a Protein pancake though :) ) - 3 egg whites + 1 whole egg, mixed with 1/3 cup oat flour, tsp of vanilla essence... and there you go... I normally put some jam on (St Dalfour - as it has no added sugars) and cinnamon!

isn't agave syrup another form of sugar? I use stevia in my coffee and tea but I believe it is not considered the same (by volume and caloric count) as sugar. Maybe agave is the same sort of thing?

How about substituting sugar for agave syrup? Just an idea.

:) You can substitute the butter, sugar and syrup with condensed milk. Flapjacks made with condensed milk are YUM! Not sure it is any healthier though, you could always add loads of dried fruit for added fibre.....

I stand corrected - flapjacks are not the same as pancakes - having done some research. But I still think you could use a sugar free pancake recipe and experiment with sugar free jams/jellies to get a suitable substitute. I use a sugar free pancake (probably a lot lighter than a flapjack) that I like (but then, I have bacon with them so it negates the healthy side of things )

google sugar free pancake recipe - you'll find a few and they're delicious. However, it's what you top them with that's the problem (there is no syrup and usually no butter in pancakes or flapjacks - some oil but not much. It's up to you to restrain yourself. I like sugar free jam on mine - I get a hint of sweetness, (but no added sugar) plus the benefits of fruit rather than syrup. It is good.
